Fry two slices of double smoked bacon. Once crispy, put them on a paper towel to catch some of the excess fat. Drain the fat from the pan, de-glaze with lime juice and add a pinch of chili flakes. Brush the bacon with the the glaze. Spread mayo and Dijon mustard on the bread. Add tomato and greens.

Chipotle burger with bacon and caramelized onion

Ingredients:
  • lean ground beef
  • double smoked bacon x 1 slice
  • red onion x 1/4 cup
  • tomato x 1-2 slices
  • cilantro x 1/2 cup
  • goat cheese
  • burger bun
  • mayonnaise
  • greens
  • salt, black pepper, chipotle pepper, olive oil
Caramelize the onion in some olive oil. Season with salt, black pepper and chipotle pepper. Set aside. In the same pan fry the bacon (don't add more oil). Put the bacon on a paper towel, once it's crispy. Mix ground beef with salt, black pepper, chipotle and some cilantro. You have to get dirty! Mix it with your hands until it combines well. Make 3/4 inch patties and let them rest until they're in room temperature. Drain the excess fat from the pan and fry the burger on the same pan on medium heat, 3-4 minutes on each side. Don't move it around and flip it once. In the last minute put some goat cheese on top of the burger. Let the burger rest for a few minutes. Toast the bun lightly. As for the condiments, I mixed some chopped cilantro, salt, pepper and mayonnaise. Assemble the toppings, place the top half of the bun and press! Then eat and enjoy ...

Beef Gyro with Charmoula Dressing



Charmoula Dressing:
meyo 2 tbsp
lemon 2 tsp
cumin 1/2 tsp
parsley (or cilantro) 2 tsp
salt, pepper

Toppings:
Strips of beef steak, sauted 2 minutes each side
Carrot, grated
Red onion
green onion
cheese (I used Gouda)
Greens

Brush the pita with olive oil. Grill for 3 minutes in the oven. Place the meat and cheese and grill for 2 more minutes. Add the rest of the toppings and drizzle some Charmoula dressing.

Walnut x 2


Ingredients:
  • chicken thighs x 2 skinned
  • crimini mushrooms x 5 sliced
  • red onion x 1/4 sliced
  • kalamata olives x 4 finely chopped
  • goat cheese
  • walnut
  • mixed greens
  • ciabatta bun
  • lime, cilantro, olive oil, butter
  • dijan mustard, salt, pepper
marinate the chicken in lime, olive oil, cilantro, salt and pepper for a few hours. Cook the chicken in 300°F oven for 20 minutes. Let it rest and cut into small pieces. Saute the mushroom and onion in butter or olive oil until cooked. Assemble the sandwich with chicken, mushroom, onion, goat cheese, walnut, dijan mustard and greens.
Salad: mixed greens, walnut, lime, dijan, olive oil, salt and pepper

Focaccia sandwich


Roast a red pepper
Get a couple of chicken thighs, bone and skin and all (or don't if you don't like meat!) ... dress with salt, pepper, olive oil, lime and cilantro. Fry (2 minutes each side) and then roast in the oven (300 degrees) for 15-20 minutes. Let it rest, then shred the meat (get rid of the skin and bone)
In the same pan, get rid of the excess oil, add some butter and fry some sliced portobello mushrooms
Make some charmoula (mayo 2 tbsp, lemon 2 tsp, cumin 1/4 tsp, parsley or cilantro 2 tsp, salt, pepper) and spread on a beautiful focaccia bread
Assemble the whole thing ... add some goat cheese, greens and tomatoes ... then eat and enjoy!
